And it's Wednesday

Time flies - whether you're having fun or not!
I, however, mostly have fun. Last evening I made seedless blackberry/apple jam, but when I asked "the Postman" to set up my propane stove in the garage to do the canning, he could not find the gas cylinders. So, I ended up putting the jars in the 'frig' to await purchase of propane today. Wouldn't you know it this morning as we were getting ready to leave for work - there were the propane cylinders on top of the garage refrigerator :~( - so I could have canned last night if we were more observant or had better memories - like that's going to happen, LOL????
I also put some apricots in the food dryer to make me some "goodies" for winter. I get to eat them all myself as the DH hates apricots - more for me I always say ;~).
I used up all of my pectin so must get more before making the raspberry jam - I leave the seeds in this as they are not so large as the blackberry seeds. Then on to other types of jam later in the season. I use the low or no sugar kind as we don't like the jam / jelly that is so sweet it hides all of the fruit flavor. If the fruit or juice is not so sweet I may add some apple or white grape juice to give it a sweetening.
I can all my fruit in very light syrup, too, for the same reason. Besides, you all know we eat too much sugar in this country anyway! When I freeze the berries they, too, have little or no sugar depending on the berry variety.

"the Postman" & I have been discussing our future. What with the economy in the dumper & not much of an inkling as to how it will progress AND the fact that we plan to be retired within 4 years, we figured we should get a good plan going. There are some things we do want to do and figure we don't want to be "scared" to do them because we don't know what the future will bring. The whole idea is we don't so let's just get on with our lives - with some planning, of course!
Anyway, the house will be paid for, the transportation vehicles will be paid for, & all we will have to do is come up with taxes & medical insurance other than living expense. Therefore a plan is needed on how to proceed. Watch for upcoming discussions..........................

I've reached the toes on my tdf socks for the Carefree KAL, so I'll get them done in time for the August 2 deadline. I'm pretty proud of myself - got the tour de fleece done on time & will get the KAL done on time, too! I'm continuing to spin daily, so shall get that other ply done in a reasonable timeframe; then on to make sock yarn!

How exciting to be planning for your retirement! It's like life is starting over again! Don't worry, it will come together. You'll see.

Apricots are great. I wish my husband didn't LOVE them, then at least I would get some too!! ;)
